Researcher Zhang Hong's team from the Institute of Resource Insects, Chinese Academy of Forestry published a research article titled "Novel edible coating based on shellac and tannic acid for prolonging postharvest shelf life and improving overall quality of mango" in Food Chemistry (https:/ /doi.
Mango is an important tropical fruit in the world, but the post-harvest storage period of mangoes is extremely short.
The results of the study show that the shellac/tannic acid edible composite coating has a significant effect on slowing down the respiration rate of mangoes, inhibiting the release of ethylene, delaying maturation and senescence, and prolonging the storage period of mangoes at room temperature.
In addition, loading tannic acid in the shellac coating improves its antifungal ability, water vapor permeability, and affinity with the peel, which is more beneficial to improve its ability to preserve the freshness of fruits.
These results indicate that the shellac/tannic acid-based composite antistaling agent is expected to be used as a new type of edible coating in commercial applications to improve the overall quality of mango fruits and extend their storage time.
