crispy fried food is popular all over the world. But a new animal experiment conducted by U.S. researchers shows that fried foods can exacerbate bowel diseases such as inflammatory bowel disease and colon cancer. They called on people with bowel disease or those at high risk of bowel disease to eat less fried food.
at the University of Massachusetts, Amster, published the paper in the new issue of the American Journal of Cancer Prevention Research. They added a mixture of frying oil and fresh vegetable oil to the food of a group of mice, while the control group added only fresh vegetable oil to the food of the control group. It was found that the inflammation of the colon in mice that had consumed mixed oil showed signs of exacerbation, that the intestinal tumor was twice as large as the control group, and that the intestinal leak worsened, causing bacteria and so on to enter the blood circulation.
that when the oil is heated, the oxidation of polyunsaturated fatty acids plays an important role in the body's inflammatory response. In the frying process of edible oil, the oil is reused continuously at high temperatures, oxidation, polymerization, lysing and hydrolysing reactions occur, resulting in compounds such as carboxyl, carboxyl, ketones, aldehyde-based compounds than the polarity of normal vegetable oil molecules, so it is called polar compounds.
to test this hypothesis, the researchers isolated polar compounds from frying oil and fed them to mice. The results showed that the progression of bowel disease in these mice was similar to that of mice fed fried oil, demonstrating that polar compounds played a key role in the inflammatory response.
However, the researchers stressed that their findings do not mean that eating fried food or fried oil can cause cancer, but rather remind people with bowel problems that eating fried food can worsen the condition of bowel diseases such as enteritis and bowel cancer, so people with bowel disease or those at high risk of bowel disease should eat less fried food.
