    The total number of colonies
     
      The total number of colonies is an indicative microbial indicator, not an indicator of pathogenic bacteria, and reflects the sanitary condition of the food during the production process
    .
    If the total number of bacterial colonies in the food exceeds the standard, it will destroy the nutritional content of the food and make the food lose its edible value; it will also accelerate the spoilage of the food, which may endanger human health
    .
    The "National Food Safety Standard Vinegar" (GB 2719-2018) stipulates that the total number of colonies in 5 samples of the same batch of products in vinegar shall not exceed 5×104CFU/mL, and the test results of up to 2 samples are allowed More than 5×103CFU/mL
    .

    Total acid (calculated as acetic acid)
     
      Total acid is one of the characteristic quality indicators of vinegar
    .
    Generally speaking, the higher the total acid content, the higher the degree of vinegar fermentation and the stronger the sourness
    .
    The unqualified total acid mainly affects the quality of the product
    .
    The "National Food Safety Standard Vinegar" (GB 2719-2018) stipulates that the total acid (calculated as acetic acid) in vinegar shall not be less than 3.
