    Principle

    Acrylamide is a polar small molecule compound
    .


    Acrylamide in food is extracted by polar solvents such as water and alcohol, purified by centrifugal filtration and column, and then brominated to generate 2,3-dibromoacrylamide (2,3-DBPA).
