researchers at New York University School of Medicine studied blood samples from 63 obese adults with an average age of 32.2 years, an average body mass index of 44.1, no smoking and no diabetes. It was found that participants who ate olive oil at least once a week had lower plateboard activity than those who ate almost no, and those who ate olive oil frequently had the lowest levels of plateboard aggregation, which was not possible with foods such as red meat, eggs and butter.
