Original title: Meat lovers will also choose vegetarian food
increased vegetarian options may allow customers to accept a meat-free diet. According to a study on the sale of food and beverage in university cafeterias, catering agencies can encourage consumers to eat
meat
more vegetarian options.
At the University of Cambridge in the UK, Emma Garnett and colleagues collected data on more than 94,000 meals sold at the university's three cafeterias in 2017. Meatless dining has four options, and overall sales remained the same after increasing from one to two, but sales of meaty meals declined and vegetarian meals rose 40 to 80 percent.
increase in vegetarian-based diets came mostly from those with the lowest baseline vegetarian rates. The researchers found no evidence that increased sales of vegetarian food for lunch led to a decline in vegetarian sales for dinner. Other variables that affect dietary choices include the relative price of meals chosen by vegetarians and non-vegetarians, as well as outdoor temperatures.
authors argue that increased vegetarian options may encourage consumers to stay away from meat-heavy diets, potentially reducing greenhouse gas emissions associated with animal foods.
