Research Background
Transesterification is an important technical means for the modification of edible oils.
The use of Sn-1,3 specific immobilized lipase to catalyze the transesterification has the advantages of mild reaction conditions and strong specificity, but sn-1,3 specific lipase catalyzes glycerol When the triester is transesterified, there is the phenomenon of acyl migration, which changes the fatty acid composition at the sn-2 position, reduces the specificity of sn-1 and 3 lipase catalysis, and affects the characteristics of the final transesterification product.
In this paper, palm liquid oil is used as the raw material, and the sn-1,3-specific lipase (Lipozyme TL IM) is used as the catalyst.
Research result
The study found that as the acyl mobility of the transesterification process increases, the trisaturated triglyceride content in the palm liquid oil triglyceride increases, the solid fat content at the same temperature increases, the crystal melting temperature increases, and the solid form The sex is enhanced, and the crystallization is more delicate.
At the same time, the influence of different reaction conditions (addition of lipase, reaction temperature, reaction time) on the migration of acyl groups was explored, and it was found that increasing the reaction temperature and prolonging the reaction time would promote the occurrence of acyl migration.
