The standard clarifies the definition and scope of fresh and live aquatic products, including fresh live animals obtained from marine and freshwater fisheries, and products that are not frozen and kept fresh at 0-4°C, mainly including fish, shrimp, crab and shellfish.

Fresh and live aquatic products are high-risk foods with high storage and transportation conditions and are perishable.
