    (i) Differences between raw materials and processes

    egg yolk phospholipid fatty acids are mostly palmic acid, oleic acid, followed by stearic acid, niacin, and also contain trace amounts of peanut tyrenoleic acid and twenty-two carbon hexaene acid in recent years, such as highly concerned polyunsaturated fatty acids and odd carbon fatty acids (such as xyluane acid), soybean phospholipids in Central Asia about 50%, almost no C20 fatty acids.(iii) phospholipid type difference

Compared with soybean phospholipids, the most striking feature of egg yolk phospholipids is that the PC content is high (up to 70% to 80%), basically free of phosphatidyl inositol (PI) and phospholipid acid (PA).
