    Selenium is a necessary trace element of the human body, involved in a variety of metabolic pathways, with the removal of free fundamentals, regulation of immunity, antagonism against heavy metals and other effects, selenium deficiency and Keshan disease and other more than 40 kinds of diseases related. Selenium-rich leaf crushed rice is one of the few ultra-selenium-rich plants, and the growth adaptability is strong, sufficient raw materials, with good medical value and civilian value. Proteins eaten by the human body are hydrolyzed into peptides, short peptides and amino acids, which are then absorbed by the body. The absorption utilization rate of protein is lower than that of peptides, and selenium peptide intake is better than selenium supplementation of selenium protein.
    The team of Professor Zhu Zhenzhou of the National Selenium-rich Agricultural Products Processing Technology Research and Development Center studied the effects of different physics enhanced extraction methods and conditions on protein extraction rate, purity and selenium content, and the results showed that the effect of ultrasonic assisted extraction was the best, with the organic selenium content reaching 9097.33 x 35.66 mg/kg, accounting for 99.51% of the total selenium content. The researchers further compared the antioxidant properties, amino acids and molecular weight distribution of different selenium peptide hydrolytes by using alkaline protease enzymes to dissophase selenium-rich proteins and purifying them with ultrafiltration and glucosal gel chromatography. The results show that selenium-rich protein hydrolysates are rich in dispeptides and tripeptides and have good antioxidant activity. Each isolate is rich in 17 amino acids, of which essential amino acids can reach 35.57% of the total (separation peak I.) and 36.88% (separation peak II.). The study provides a reference for the efficient extraction of selenium-rich leaf-rich rice medley protein and selenium-rich polypeptide resource development and utilization, the relevant research results published in the international journal Food Bioscience (Agriculture and Forthology Science Zone II, impact factor 3.067), graduate student Wu Meiling as the first author, Dr. Li Shuyi and Dr. Zhu Zhenzhou as co-authors.
