The project was jointly completed by Chongqing Shaoling Juice Group Co., Ltd., Sichuan Food Fermentation Industry Research and Design Institute, Sichuan Dongpo China Kimchi Industry Technology Research Institute, Chongqing Chongqing Southeast Agricultural Academy of Sciences, Sichuan Yiliuyuan Technology Testing Co., Ltd.

Squeezed vegetables, kimchi is a low-sugar low-fat food, calcium, iron, magnesium and other mineral elements and dietary fiber content is rich. The project team compared the nitrate content of squeezed vegetables, kimchi and other foods in Central Asia, evaluated the risk of nitrite contamination and food safety of squeezed vegetables and kimchi, and confirmed that the risk of nitrite poisoning caused by eating commercially available vegetables and kimchi was very low. The project also analyzed the bio-chemical reaction pathways for nitrite generation and degradation of saline vegetables and the main enzymes involved in the metabolism of nitrites in kimchi.
    It is understood that the project belongs to the basic research research, the research results prove that the nitrite content in vegetables and kimchi does not affect the safety of consumption; The Evaluation Commission rated the project highly, considering it to be a domestic leader.
