    Recently, Zhang Feng, chief expert team of the Chinese Academy of Inspection and Quarantine Sciences, has made breakthroughs in the research on the spatial distribution of risky substances in food.


    At present, the imaging technologies widely used in the study of the spatial distribution of food safety risk substances mainly include hyperspectral imaging, terahertz imaging, Raman spectroscopy imaging, etc.
    , which have the advantages of simple operation, non-destructive, and no pre-processing.
    However, there are still the following technical bottlenecks: ( 1) The spatial resolution is low and it is difficult to analyze complex systems; (2) It is easy to be interfered by environmental factors and difficult to achieve accurate analysis; (3) The detection sensitivity is low and it is difficult to analyze trace substances

    As a new type of molecular imaging technology, mass spectrometry imaging can obtain in-situ visualized spatial distribution information of substances in tissue slices.


    In this report, the research team first optimized the spray substrate, slice thickness, laser dots and other key parameters, established a mass spectrometry imaging analysis method for PFOA in zebrafish model organisms, and used it to monitor the PFOA of different zebrafish tissues exposed to a simulated PFOA environment.
