    Interpretation of some unqualified projects

      (1) Interpretation of sulfur dioxide residues in unqualified items of dried vegetable products

Sulfur dioxide (as well as potassium metabisulfite, sodium sulfite and other additives) has bleaching, anti-corrosion and anti-oxidation effects on food.
It is a commonly used bleaching agent and preservative in food processing, and all produce sulfur dioxide residue after use
    .
Ingesting a small amount of sulfur dioxide can be excreted in urine after being converted by enzymes in the human body.
Generally, it will not cause adverse effects on human health.
However, if excessive intake of sulfur dioxide for a long time, it may be harmful to health
    .
The "National Food Safety Standard Food Additives Use Standard " (GB 2760-2014) stipulates that the maximum residual amount of sulfur dioxide in dried vegetable products is 0.
    2g/kg
    .
Excessive sulfur dioxide residues may be due to excessive use of sulfur dioxide (and potassium metabisulfite, sodium sulfite and other additives) and other bleaching agents in the processing process to achieve bleaching and anti-corrosion effects, resulting in unqualified sulfur dioxide residues in the product
    .

      (2) Interpretation of the total number of colonies in unqualified pastry items

The total number of colonies is an indicative microbial index, not an index of pathogenic bacteria.
It is mainly used to evaluate the cleanliness of food and reflect whether the food meets the sanitary requirements during the production process
    .
The "National Food Safety Standard Cooked Meat Products" (GB 2726-2016) stipulates that for cooked meat products (except fermented meat products), 5 test results of one sample shall not exceed 105CFU/g and at least 3 test results shall not exceed 104 CFU/g
    .
The "National Food Safety Standard Cakes and Breads" (GB 7099-2015) stipulates that the total number of colonies in the cakes shall not exceed 100,000 CFU/g for 5 times and the results of at least 3 times shall not exceed 10000 CFU/g
    .
The "National Food Safety Standard Preserves" (GB 14884-2016) stipulates that the five test results of a single candied fruit sample shall not exceed 104 CFU/g and at least three test results shall not exceed 103 CFU/g
    .
According to the National Food Safety Standard for Reconstituted Cereal Products (GB 19640-2016), the total number of bacterial colonies in the same batch of 5 individually packaged products is not allowed to exceed 105CFU/g, and the test results of at least 3 packaged products Not more than 104CFU/g
    .
Exceeding the total number of colonies may be due to the fact that the initial bacterial count of the raw materials used by individual enterprises is relatively high, and the hygienic conditions of the production and processing process are not strictly controlled as required, or the packaging containers are not cleaned and disinfected in place, or they may not be tightly sealed with the product packaging and stored.
    Improper control of transportation conditions
    .
