    How do heavy metals migrate and transform in crayfish? How big is the residual hazard? Is there a risk of pollution to the external environment? These problems that have been plaguing "foodies" and farmers who love crayfish have been recently revealed by Mo Aijie, a doctoral student in the team of associate professor Yuan Yongchao from the School of Fisheries of Huazhong Agricultural University


    In recent years, with the vigorous development of the crayfish consumer market, the scale of its aquaculture has also expanded rapidly


    Crayfish aquaculture areas are mainly concentrated in 23 provinces and municipalities including Hubei, Anhui, Hunan, Jiangsu, Jiangxi, Sichuan, Shandong, Henan, Zhejiang, and Chongqing


    The comprehensive data showed that food-borne cadmium input accounted for more than 50% of the total cadmium input flux in the two models, while the input flux of arsenic and chromium was mainly from irrigation water, and the main input flux of lead was atmospheric deposition


    This study shows that the potential risk of heavy metal residues in the integrated rice and shrimp farming model is very low, it will not cause heavy metal discharge pressure to the external environment, and the risk of heavy metal pollution in its food is also low


    Relevant persons said that the results of this research revealed the dynamic migration and transformation of heavy metals in the food chain in the integrated rice and shrimp breeding model, which has important guiding significance for crayfish breeding models, rational selection of breeding strategies and food safety production
