Ethyl maltol is a safe and low-dose flavoring agent.
Maltol flavoring agents mainly include maltol, ethyl maltol, maltol isobutyrate and maltol propionate, of which maltol and ethyl maltol are the two most used categories
Maltol is widely found in nature, in wheat, barley malt roasting coagulum, and in the leaves and bark layers of certain fir and larch trees
Ethyl maltol can be divided into three categories according to the application scope and effect: pure flavor, light caramel flavor and mellow flavor
Ethyl maltol has the characteristics of aroma enhancement, color protection and weight reduction in meat products, and also has the effect of flavor "emulsification", which fully integrates the aroma and essence of meat, and the taste is more round and mellow.
Some experiments have pointed out that adding a small amount of ethyl maltol in the production of fruit juice drinks, carbonated drinks, and candies can reduce the amount of sucrose by 10%-15% without affecting the sweetness
However, ethyl maltol also has a significant disadvantage, it is very easy to complex with iron ions and turn into reddish purple, so it is very sensitive to iron-containing articles
It should be reminded that ethyl maltol should not be abused in practical applications
